Easiest cookies ever!

From the first day of school, I start in on my third graders and their listening skills. I’ll admit, I’m not above subtle hints. Many times, my kids hear about my love for chocolate, cookies, and chocolate chip cookies. Here is a story of one adorable girl who listened…and made my day a little sweeter. For the second time this year Caitlynn showed up with wrapped goodies, approximately 8 vanilla and chocolate cookies dunked in powdered sugar. By lunch time there were only two left. Caitlynn got herself a big thank you hug and her mom was sent an email requesting the recipe. The cookies were soft, simple, and addicting (pretty sure it was the powdered sugar that kept me coming back)…and they were the easiest cookies ever to make. In less than 20 minutes, I’m sitting here enjoying my second one and typing it out for others to try.




Gooey Butter Cookies
1 box (any flavor) cake mix
1/2 pkg. cream cheese
1/2 stick butter
1 egg
dash of vanilla
powdered sugar
Combine all ingredients, roll into balls.  Roll balls in powdered sugar and place on baking sheet.  Bake at 350 degrees for ONLY 12 minutes (don't over bake).
I used vanilla flavored cake mix, but I am looking forward to experimenting with other flavors. I think chocolate and red velvet are up next!

Nothing more important...

Through thick and thin, laughter and tears, even when they try to feed me vegetables...my family is the love of my life.
My husband, Nathan, has gone from my childhood crush, to the wise older man ;), to patient husband for 2+ years. He is the guinea pig for my recipes and is stretching his taste buds day by day. Here he's eating the infamous molten chocolate cake...I've tried many times to duplicate this wonderful treat from our one-year-anniversary cruise. Never succeeded and I've come to infer that his memory has put this stupid chocolate cake on a pedestal...but maybe that'll help me convince him for a second round on a cruise ship!

My baby girl Tinkie is my pride and joy...don't you love her sweet (ornery) face?! Tinkerbell's duties in our household include: snuggle bear, lap dog, stranger greeter, floor waterer, ear drum burster, face washer, spit slinger, dirt tracker, and currently holds the reign as tug of war champion. 

But the reign for Ruler of the House goes to...
Tarzan, my step dog. I tell Natey all the time how I truly see Tarzan as wiser and more in control of our space than I am...I'm letting you in on too much! He's my saving grace as personal body guard from creepy men, strange noises, and suspicious looking leaves. This guy will take Tinkerbell down in a second!

My dear mother, best friend, and personal life coach :) We seem to always get ourselves involved in more than two people should even dream about and she always seems to finish our crazy projects! When it come to having fun, we take the cake. Living three hours away from each other really forces us to make use of our time together. I usually go to bed around 7pm the Monday after we spend a weekend together because I am pooped. Girl can run circles around me!

And my dad...everything I am is him. Good or bad? It depends on the day! :) I'm a great fan of my father but could take him down in a debate any day!
(And we all love and miss Winnie, our girl in doggie heaven.)

Meet Casey

Introducing...myself! A 25 year old girl, wife, daughter, teacher, cooker, crafter, baker, dreamer. I love to try new things and this blog is a little out of my comfort zone.
