Pasta Fagioli

This delicious soup was such a welcome change from my norm. Super filling with both beans and pasta, just pair with a slice of crusty bread and you're good to go!


Pasta Fagioli Ingredients:
1 pound Italian sausage
1/4 cup finely chopped onion
4 cups chicken broth (1 carton)
1 can petite diced tomatoes
1 can canellini beans
1 can kidney beans
1 1/2 cup ditalini pasta
1 1/2 tsp. Italian seasoning
salt and pepper
Parmesan cheese


Brown sausage in a large stock pot.
Add onions to the pan and cook until translucent.


Add chicken broth and tomatoes.
Smash 1/2 can canelleni beans and add to the pot.
Add remaining canelleni beans and can of kidney beans.
(Drain and rinse both beans before adding to soup.)


Add pasta and Italian seasoning.
Cook until pasta is tender.


Serve with a sprinkling of Parmesan cheese.

Taco Soup

Taco soup is something I've wanted to try for a long time (and chicken tortilla soup, but that's for a different day). I found this recipe on Tasty Kitchen, a group website created by the much popular Pioneer Woman. It was delicious, comforting, and made a ton! Next time around, I plan on sticking a bowl in the freezer for one of my lazy nights!


Taco Soup Ingredients:
1 lb. ground beef, cooked and drained
1 can, 28 oz. crushed tomatoes
1 package taco seasoning
1 package ranch dressing mix
1 can pinto beans, drained and rinsed
1 can black beans, drained and rinsed
1 can chili beans, with sauce
2 cups frozen corn kernels
3 cups chicken broth


Step 1. Dump all in a pot and simmer 30ish minutes.
The end.

I love easy meals.


Topping ideas:
Fritos, shredded cheese, sour cream, green onions, cilantro

This recipe made me fall in love with Fritos again, I had forgotten about their salty goodness.


Load it up and...yum!

White Chicken Chili

Happy Monday my friends!! This recipe is solely my dad's creation, or re-creation. Everyone knows the famous saying that you would rather do a few things well than many things not well...or however it goes. Well, the same goes for him and cooking. One of his few delicious recipes happens to be this chicken chili. Super easy, and because it takes a Williams seasoning packet, a lot of the work is done for you!


White Chicken Chili

Ingredients:

3 chicken breasts, cooked and shredded/chopped
2 cans Great Northern Beans
1 can chicken broth (or enough to fill an empty bean can)
1 teaspoon salt
1 package Williams Chicken Chili Seasoning
1 cup sour cream
1/2 cup whipping cream


1. In a large pan, combine chicken, beans, broth, salt, and seasoning packet.
2. Bring to a boil. Reduce heat.
3. Simmer uncovered for 30 minutes, stirring occasionally.


5. Remove from heat. Stir in sour cream and whipping cream.



Serve immediately. Not that you could resist the smell!

Cheeseburger Soup

Fall is here and soup is on the stove!
I love this cheeseburger soup! Our family usually has it on Christmas Eve (along with many other soups), and I got the recipe from my Aunt Janet and cousin Jennifer. It is delicious and takes "normal" ingredients that I typically already have on hand (minus the carrots). It also freezes well. And if your husband doesn't drop his full bowl all over the kitchen, it will last you well past one meal... which is usually my goal!
Ingredients:
1 lb. ground beef                       3/4 cup chopped onion
3/4 cup shredded carrots             3/4 cup diced celery
1 tsp. basil                               1 tsp. dried parsley flakes
4 Tbsp. margarine                      3 cups chicken broth
4 cups peeled, diced potatoes      1/4 cup flour
8 oz. cubed cheddar cheese         1 1/2 cups milk
3/4 tsp. salt                              1/2 tsp. pepper
1/4 cup sour cream

Directions:

Brown ground beef. Drain and set aside.



In 3-quart saucepan, saute onions, carrots, celery, basil, and parsley flakes in 1 tablespoon margarine until vegetables are tender or about 10 minutes.


Add chicken broth, potatoes, and beef. Bring mixture to a boil. Reduce heat, cover and simmer 10-12 minutes or until potatoes are tender.


While above is simmering, melt 3 tablespoons margarine in small skillet, add flour. Cook while stirring 3-5 minutes until bubbly. Add to soup and bring soup mixture to a boil and cook, while stirring, for 2 minutes. Reduce heat to low. Add cheese, milk, salt, and pepper. Cook while stirring until cheese melts. 

Remove from heat and blend in sour cream. 


Cheeseburger soup is yummy with cheesy garlic bread, family, and falling fall leaves! :)
